Banana Pancakes – just 2 ingredients!
I work at a cool company! We do fun things like ride bikes, have BBQ’s for lunch year round and more recently we introduced pancake breakfast Friday.
I’m obviously ‘that girl’ in the office who can only eat certain foods. But determined not to be left out of pancake Fridays I found my own paleo friendly recipe yey!
This is what they ate – thick blueberry pancakes,
As good as they look I didn’t want to suffer the consequences – the dreaded bloat, gas and the 2pm slump. Sometimes the lure of certain foods do make me cave in but it has to be something pretty bloody special. I’m all about the 80:20 rule!
This is what I ate – guilt free yummy pancakes
They taste as good as they look, really not much of a difference to regular pancakes. Also because of the sweetness of the banana they don’t need any maple syrup or honey drizzled over. They set me up for a great day with a ton of energy for a sneaky lunch time bike ride.
Recipe:
- One (1) Banana mashed up with a fork
- Two (2) Eggs
- Whisk them together and fry in a good pastured butter, for a couple of minutes each side or until golden brown.
- DONE
Super easy, Super tasty! Great for breakfast or anytime you need a little ‘tide me over’ fix.
