Paleo Apple Crumble

One thing I love to do lately is re-create our old favorite ‘naughty’ foods into paleo friendly wonders! Most of the time I get it right first attempt and its high fives all round but there have been a few failures along the way too. I won’t go in to the Paleo burger bun incident though, I’m not ready…

One of Mike’s favorite foods is homemade Apple Crumble or Apple pie; it’s a proper English comfort food and reminds us of home.

I thought Mike deserved a little treat as he’d been working hard all weekend and had just headed out to distress on the football pitch.

So I got out the iPad and googled paleo apple crumble and found this recipe. I chose it mainly because I had everything I needed and also it looked pretty similar to the traditional crumble.

Paleo Apple Crumble – Step 1

Ingredients:

  • 5-8 Granny Smith apples (mine were huge so only used 4)
  • 1 lemon
  • 1/2 cup ground flax seed meal
  • 2 cups almond flour
  • 2 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1/4 cup coconut oil
  • 2 tablespoons honey
  • 1/4 cup chopped walnuts

Paleo Apple Crumble – Step 2

Apples-

  1. Peel and chop apples and place in a cooking dish.
  2. Squeeze the juice of one lemon over the apples.
  3. Cover apples with ground cinnamon.
  4. Toss apples with lemon and cinnamon until the cinnamon is evenly distributed over all the chopped apples.

Paleo Apple Crumble – Step 3

Topping-

  1. In a mixing bowl, combine almond flour and flax seed meal.
  2. Add in cinnamon and nutmeg, and mix with a spoon.
  3. Add in coconut oil and honey, and mix again until evenly combined.
  • Preheat oven to 350
  • Cover apples with topping and place in oven.
  • Bake apples for 40-50 minutes or until apples are soft, and topping is crunchy.
  • When is just about finished add the chopped walnuts and bake for remaining time (5-10 minutes is ideal). You don’t want to burn the walnuts – just lightly toasted is ideal.

 

Paleo Apple Crumble – Step 4

It turned out great and I couldn’t resist having a portion whilst it was still piping hot from the oven, mmm so good!

Mike was also pretty chuffed, he brought a buddy home with him from football too so when they opened the door to the smell of freshly baked apple crumble I got some serious good girlfriend props!
