Paleo Fudge
I may have mentioned this at least 100 times but I have a huge chocolate addiction.
Eating paleo means you struggle to buy ready made paleo treats (unless you pay a fortune and find somewhere that stocks them). So this inevitably means you will find yourself making them at home, which is fine but because I now have these recipes dialed and they are so easy to make I do have to start limiting my consumption, all in moderation as they say.
Paleo Fudge has got to be the #1 treat in our house, it’s a taste sensation I tell you!
I use this recipe I found on Fast Paleo: http://fastpaleo.com/paleo-fudge/ its fail proof.
Ingredients:
- 3/4 cup almond butter
- 1/2 cup coconut oil
- 1/4 cup honey (use less if you don’t want it too sweet)
- 1/2 cup cocoa powder
- 1/2 cup unsweetened shredded coconut
- 1/2 teaspoon pure vanilla
- 1/2 cup Enjoy Life chocolate chips (or other paleo chocolate)
Directions:
- Line a 9×9 baking pan with parchment or wax paper
- In a microwave safe bowl combine almond butter, coconut oil, and honey – heat for one minute (I do it in a pan over the stove on a very low heat)
- Then in a large bowl add cocoa powder, melted ingredients and vanilla and mix until smooth
- Add in the coconut and make sure all coconut is covered
- Sprinkle in the chocolate chips and give it a few stirs
- Pour mixture on top of the parchment paper and let sit in the refrigerator for 2-3 hours
- Cut into small pieces (pizza cutter is my weapon of choice) and ENJOY!
note: these must remain refrigerated. they will melt if they get too warm.
